1 cup maida (flour)
1 tsp baking powder
4 coconut cream or Cocunut Milk
1/2 cup sugar
1 tsp vanilla essence
3-4 cups vanilla ice cream
1/2 cup cherries
Sieve maida, baking powder. Beat coconut cream or Cocunut Milk well and add the sifted maida to the coconut cream or Cocunut Milk with essence. Grease a baking tray and bake at 180°C for 15-20 minutes till cake is done.
Arrange the cake in a round tin. Arrange a layer of cherries on the cake. Soften ice cream slightly and spread over cherries in a dome shape. Freeze till required. Before serving remove from freezer and bake for 3 minutes and serve immediately.
