CABBAGE MUTHIA SNACKS FOR DIABETICS

Ingredients (Serves 4-6)

1 cup heaped grated cabbage

1 cup heaped gramflour

1/2 cup heaped atta

1/2 cup grated carrot

1/4 tsp bicarbonate of soda

1/2 tsp garam masala powder

1 tsp salt

1 tbsp lime juice

1/4 tsp turmeric powder

Pinch of chilli powder

Pinch of asafoetida

2 tsp oil

For Tempering

1 tsp oil

1 tsp urad dal

1 tsp mustard seeds

10-15 curry leaves

1 green chilli, chopped

A handful of coriander leaves.

Preparation

Muthia: Sieve together the gramflour, atta and soda; Mix all the ingredients and knead to a soft dough. If necessary add a few drops of water. Divide the mixture into 3 sausage shapes. Steam in a pressure cooker for 25 minutes. Open cooker after 5 minutes. The muthias will gain in size and crack at a few places on top. Cut into pieces.

Tempering: Heat the oil in a karahi. Add the urad dal. When it turns darker, add the mustard seeds, then add the green chillies and curry leaves. Stir fry and add the muthias. Fry gently over a medium heat for 2 minutes. Serve with green chutney.

Variation: May use 11/2 heaped grated bottle gourd the same way.

 

Gujarati food is very healthy because it relies a lot on steaming. Uses very little oil, too. This muthia is full of fibre and nutrition.
