CASSATA ICE CREAM

Ingredients

500 ml vanilla ice cream

200 ml chocolate ice cream

150ml cream

20 gms pistachios chopped

10 walnuts chopped

50 gms glazed cherries

2 tbsps brandy or rum (optional)

2 tsps grated chocolate

2 cups cream

Method:

 

Soften vanilla and chocolate ice cream. Take a round bowl and place a steel glass inverted in the centre of the bowl. Beat vanilla ice cream with a fork and pour into the bowl. Put in the freezer to set. Put the chopped nuts, cherries and brandy in a bowl and mix well. Once vanilla ice cream has set remove glass so that a well is formed in the centre. Put a layer of cherries and nuts mixture.' Beat chocolate ice cream and pour into the well. End with another layers of cherries and nuts. Freeze till firm. Unmould before serving. Pour whipped cream on top and decorate with grated chocolate.
