North Indian Style Carrot Pickle


2 cups carrots, peeled and cut into sticks

1 medium beetroot, blanched and cut into sticks

1 medium raw mango, peeled and cubed

1 large lemon, cut into 8 pieces

8-10 shallots, peeled

2 tbsp split mustard grains

2 tbsp salt

4 tbsp vinegar

4-5 green chillies, slit

1 cup mustard oil

A pinch of turmeric powder


1. Soak onions in vinegar overnight. Mix all ingredients except oil, in a bowl and toss gently.

2. Fill this in a jar and pour hot and also cool oil to coat the vegetables. Use after three to four days.

Makes 1/2 kg
