ICY PINEAPPLE WITH SAUCE

ICY PINEAPPLE WITH SAUCE

Ingredients:

1 medium size pineapple (ripe)

3 tsps gelatine

125 gms sugar

500ml water

1/2 cup cream

1/2 cup chopped nuts

2 tsps pineapple essence

A little yellow colouring if desired.

Method:

Heat water and sugar till it has dissolved. Boil till mixture becomes a golden syrup. Allow to cool. Cut pineapple into small pieces. Blend in a mixture till a thick puree is formed. In a little bit of sugar syrup dissolve the gelatine and heat over a pan of water till dissolved. Add pineapple puree, essence to the sugar syrup. Fold in beaten cream and freeze. Serve garnished with chopped nuts and pineapple sauce.

For Pineapple Sauce:

Ingredients:

1 cup pineapple syrup (from tinned pineapple)

1/2 cup sugar

1 ½ tbsps cornflour

1 tsp pineapple essence

Method:

 

Mix pineapple syrup, sugar, cornflour and blend well. Heat and stir till thick. Remove from fire and add essence. Cool and serve with ice cream.
