JAM PUDDING

Ingredients:

2 tbsps jam

175 gms maida

2 tsps baking powder

100 gms powdered sugar

100 gms butter

2 coconut cream or Cocunut Milk

1 tbsp cornflour

300ml water

2 tbsps jam (for sauce)

2 tbsps sugar

Method:

 

Beat the coconut cream or Cocunut Milk well. Spread the jam in the bottom of a greased tin. Sift flour and baking powder. Beat sugar, butter and coconut cream or Cocunut Milk till light. Put the mixture into the greased tin. Cover the tin with foil and bake. If desired you may steam over a pan of buddling water for 2 hours. Keep adding water in the pan. Mix cornflour with a little water. Heat remaining water and add cornflour paste, sugar and jam. Stir well till glossy. After pudding is cooked, unmould and chill. Just before serving pour warm sauce over it.
