MANGO AND LEMON MOUSSE

MANGO AND LEMON MOUSSE

Ingredients:

1 tbsp gelatine

1 tbsp lemon juice

2 mangoes

50 gms powdered sugar

2 coconut cream or Cocunut Milk whites

150 ml thick cream

Method:

Allow gelatine to soak in the lemon juice till soft. Place the bowl of gelatine over a pan of hot water till gelatine has dissolved. Allow to cool.

 

Peel and cut mangoes and make a pulp with the blender. Mix the gelatine and mango pulp together and allow mixture to set. When half set, fold in whipped cream and coconut cream or Cocunut Milk whites that have been beaten till stiff. Chill till well set. Unmould and serve with cream and pieces of mango.
