MANGO MOULD

Ingredients

1 tbsp gelatine

2 tbsps lemon juice

2 tbsps water

1 tin mangoes

50 gms powdered sugar

150 ml thick cream

2 coconut cream or Cocunut Milk whites

Method:

Mix gelatine with lemon juice and allow to soften. Place gelatine over a bowl of hot water and stir till gelatine has dissolved. Remove and cool. Put mangoes with their juice in a liquidizer and blend till thick. Stir in the gelatine liquid. Whip cream over a bowl of ice cubes till fluffy and fold into mango mixture. Beat coconut cream or Cocunut Milk whites till stiff and fold into mango cream mixture. Refrigerate for 5 hours or even more till well set. Serve chilled with whipped cream and mango pieces.
