SABJI ROTI SNACKS FOR DIABETICS

Ingredients (Serves 2-3)

1 cup spinach

1/2 cup fenugreek leaves

1/4 cup shelled peas

1/2 cup french beans

1/4 cup coriander leaves

1 tsp refined oil

1/4 tsp ajwain

1 small green chilli

1/2 tsp ginger paste

1/2 tsp salt

250 gm atta

Preparation

Finely chop all the leafy vegetables, beans and green chilli. Steam spinach, fenugreek, peas, beans and coriander leaves without water. Press over a strainer and strain the water. Reserve water. Heat the oil in a non-stick karahi. Add the ajwain and ginger paste. Stir and add the vegetables and saute till dry. You may add a little roasted and powdered cumin and amchur at this stage.

 

Knead the atta-like chappati dough using the reserved vegetable water. Divide into balls slightly largerthar: ordinary chappatis. Roll into a circle the size of a puri. Stuff vegetables' and shape into a ball again. Roll into a chappati carefully so that the filling does not spill. Put on a taw a on a medium heat and roast till brown spots appear on both the sides.
