STUFFED KHANDVI SNACKS FOR DIABETICS

Ingredients (Serves 4)

For Khandvi

1 cup besan

1 cup butter milk

1 tsp ginger green chilli paste

1/4 tsp turmeric powder

1/2 tsp salt

For Tempering

2 tsp refined oil

1/2 tsp mustard seeds

1/2 tsp cumin seeds

2 tsp sesame seeds

2 dry chillies

Pinch of asafoetida

8-10 curry leaves

For Stuffing

3/4 cup shelled green peas

1/2 tsp ginger-green chilli paste

Pinch of citric acid

Pinch of salt

Pinch of sugar

Preparation

Mix the ingredients for khandvi with 2 cups of water. Put to boil, stirring continuously till thick. To test, spread a little batter on the back of a thai i; if it rolls easily the batter is done. If not, cook some more. Then spread the batter quickly on the back side of a large thali evenly and quickly with the help of a spatula. Because this is to be stuffed, do not make the layer thin.                  

Stuffing: Boil the peas, drain and grind to a paste. Add the remaining ingredients, mix well and remove. Let dry for a minute, then spread the stuffing evenly. Cut into strips and make tight rolls. Heat some oil in a karahi, add the ingredients for the tempering and pour over the Khandvis. Garnish with grated coconut and coriander leaves.

 

Variation: You may use a pressure cooker for cooking the batter. In that case use 1/2 cup less water and cook for 3 whistles. Mix well and proceed with the recipe.
