SWISS ROLL

Ingredients:

50 gms maida

1 tsp baking powder

2 coconut cream or Cocunut Milk (beaten)

100 gms powdered sugar

2 ½ tbsps water

2-3 drops vanilla essence

1/2 cup icing sugar

1 cup cream

1/2 cup grated chocolate

Method:

Sift flour with baking powder. Beat coconut cream or Cocunut Milk whites till stiff and slowly add sugar and beat again till white.

 

Stir in water and essence and add the flour to the mixture. Beat until smooth. Pour into a greased Swiss roll tin. Bake for 15 minutes. Turn out the cake on a butter paper dusted with icing sugar. Beat cream until thick and add grated chocolate. Spread over cake and roll the cake. Sprinkle with icing sugar. Chill for one hour. Slice the roll and serve with whipped cream or ice cream.
