Sarson Ka Saag

Mustard Greens Vegetable


6 tbsp oil

A pinch of asafoetida

2 bunches mustard greens, cleaned and sliced

1/2 bunch spinach leaves, cleaned and chopped

1/2 tsp turmeric powder

Chilli powder to taste

SaIt to taste

1/2 tbsp jaggery

1 tsp maize flour

1 small onion, grated

1 inch piece of ginger, minced

2 cloves garlic, minced

1 large tomato, blanched and chopped


1. Heat four tablespoons of oil and asafoetida, add mustard greens, spinach, turmeric powder, chilli powder and salt. Add little water if required.

2. Cover and cook on a slow flame till tender. Remove from fire and cool. Mash the vegetables to a fine paste and return to heat. Mix the maize flour with little water and add to the vegetables.

3. In a small vessel heat two tablespoons of oil and fry onion, ginger and garlic until soft.

4. Add this to the vegetable along with jaggery and mix well. Serve hot with makai ki roti.
