Sweetened Lemon Water

INGREDIENTS

2 fresh lemons

3-4 tbsp sugar

A small pinch of salt

4-5 strands saffron, powdered

2 cups water

To Serve

Ice cubes

METHOD

1. Squeeze juice from lemons and mix with sugar and salt until sugar has melted.

2. Add a little water and saffron. Mix well.

3. Add remaining water and pour into two tall glasses filled with ice.

Serves 2

Lemon Snow Mist

INGREDIENTS

1 cup whipping cream

500 ml Sprite or Lemonade

For Lemon Curd

3/4 cup sugar

4 tbsp lemon juice

4 tbsp corn flour

1 tbsp butter

1 ½  cups cold milk

METHOD

For Lemon Curd

1. Mix all the ingredients for lemon curd in a saucepan and heat gently, stirring continuously. Remove from heat when the mixture is thick and transparent.

2. Set aside to cool. Whip the cream until it forms soft peaks. Fold it into the lemon curd when it is completely cool. Mix well. Freeze this mixture for three to four hours or overnight.

3. Place a scoop of frozen lemon cream in a tall pilsner glass. Top it up with chilled Sprite.

4. Add the Sprite gently to prevent the froth from overflowing. Serve with a straw.
