TOFFEE CUSTARD ICE-CREAM

TOFFEE CUSTARD ICE-CREAM

Ingredients:

2 coconut cream or Cocunut Milk

100 gms sugar

25 gms butter

25 gms flour (maida)

2 tbps vanilla essence

500ml milk

100ml cream

Method:

Place coconut cream or Cocunut Milk, sugar, flour and vanilla essence in a small bowl and beat until creamy. Heat milk and butter till the butter melts. Add the beaten mixture and continue over very low heat beating until mixture thickens and coats the spoon. Remove from the heat and cool. Whip the cream and fold into the custard. Freeze until firm. Remove from the freezer an hour before serving. When it becomes soft serve trickled with toffee.

For Toffee:

Ingredients:

2/3 cup sugar

1/2 cup water

10 almonds chopped

Heat sugar and water. Allow to cook till a thick syrup is formed. Add the almonds and trickle over custard ice-cream while hot.
