BATHUA AND ORANGE SOUP FOR DIABETICS

Ingredients (Serves 2)

250 gm bathua greens

1/2tsp salt

1 tbsp homemade pulpy paneer

1/3 cup milk

1 cup fresh orange juice

1/2 tsp pepper

Juice of half a lime

A few lime slices for garnishing

Preparation

 

Wash the bathua leaves in several changes of water; discarding the tough stems; shred finely. Pressure cook with 1/2 cup of water and salt for 5 minutes. Cool, blend and strain. Blend the paneer and milk together. Heat the soup, orange juice and pepper together. Mix in the paneer. Remove. Serve hot, sprinkled with lime juice and garnished with lime slices.
