Black Masala

INGREDIENTS

1 ¼ cup dried coconut, grated

5 cups coriander seeds

1/4 cup sesame seeds

1/4 cup cumin seeds

1/4 cup caraway seeds

3/4 cup poppy seeds

2 tsp mustard seeds

1 tsp fenugreek seeds

4 tsp cloves

8-10 sticks cinnamon

15 green cardamoms

2 tbsp mace

4 tsp asafoetida

2 tbsp turmeric powder

3/4 cup red chilli powder

1/4 cup salt

10-12 bay leaves

Oil for roasting

METHOD

1. Roast the coconut in a little oil until light brown and set aside.

2. Sauté the coriander seeds, sesame seeds, cumin seeds, caraway seeds and poppy seeds in a little oil and keep aside.

3. Sauté mustard seeds and fenugreek seeds in a little oil. Add cloves, cinnamon and cardamom seeds.

4. Make a powder out of all the sautéed spices, mace and coconut.

5. Mix this powder with asafoetida, turmeric powder, red chilli powder and salt. Store in an airtight bottle.

Makes 1 ½ kg
