CONSOMME JULIENNE SOUP FOR DIABETICS

Ingredients (Serves 4)

850 ml stock

1 medium carrot

2 sticks celery

1 small onion

2 cloves

1 egg

125 gm minced chicken

1 0 peppercorns

Salt to taste

1 tbsp vinegar

Preparation       

Refrigerate the stock overnight. You'll find the fat congealed on top. Remove the fat and discard. Cut the carrot and celery into juliennes, that is matchlike strips. Stick the cloves into the onion. Beat the egg into the stock. Add the vegetables and minced chicken. Put to boil. Add the onion, peppercorn, salt and vinegar when it comes to a boil. Simmer covered for one hour. Strain and serve. Only the soup is drunk; the rest discarded. Garnish with finely chopped parsley.

 

This healthy soup makes a very good mid morning or evening snack.
