CREAMY MATAR PANEER SOUP FOR DIABETICS

CREAMY MATAR PANEER SOUP FOR DIABETICS

Ingredients (Serves 2)

21/, cups chicken stock

1 tbsp refined oil

1/4 cup chopped onion

1 tsp atta

1 cup shelled peas

1/4 Cup soft paneer

2 tsp lime juice

2 tbsp chopped green chilli

Salt to taste

Freshly ground pepper to taste

Preparation

The stock should be fat-free. To achieve this, refrigerate the stock overnight. The fat will congeal on top. Remove and discard. Heat the oil in a large saucepan. Add the onion and saute till transparent. Add the atta and stir for 1 minute. Stir in the stock. Add the peas, simmer with lid on till the peas are done. Transfer half the mixture to a blender and puree with the paneer till smooth. Add the lime juice. Heat the puree with the remaining soup, chilli, salt and pepper. Serve hot.

 

The paneer in this soup provides a richness, surprisingly similar to that of cream, but without the fat and cholesterol.
