DUMPLING SOUP FOR DIABETICS

DUMPLING SOUP FOR DIABETICS

Ingredients (Serves 4)

For Soup

6 cups chicken stock or vegetable stock

A handful of fresh coriander

For Dumplings

4 tbsp fenugreek leaves, very finely chopped

1 cup gramflour

1/2 cup atta

1/2tspoil

1 tsp ginger paste

1/2 tsp chilli powder

1:/4 tsp soda bicarb

Pinch of turmeric

Pinch of salt

Preparation

 

Mix all the ingredients for the dumplings into a stiff dough with water. Form into small balls. Put the stock to boil. If using chicken stock, refrigerate for a, couple of hours to let the fat congeal. Discard the fat and only then use the stock. Once the stock comes to a boil, add the dumplings gently and cook till they float on top. Serve garnished with coriander leaves. You may add lime juice to taste.
