GREEN PEAS SOUP

GREEN PEAS SOUP

500 grams fresh green peas with pods

2 teacups white sauce salt and pepper to taste

To serve

fresh cream bread croutons

For the pea lovers.

Preparation time: 15 minutes.

Cooking time : 20 minutes.

Serves 6.

Put the peas with pods and 4 teacups of water in a pressure cooker and cook until soft.

Blend in a liquidiser and strain.

Add the white sauce, salt and pepper and mix thoroughly.

Serve hot topped with fresh cream and bread croutons.

Note: Be sure to use very fresh peas in pods. If not in season, use 1 teacup frozen green peas.
