LIVER SOUP RECIPES

Ingredients (Serves 3)

250 gm liver, minced

1 tbsp, brandy

2 cheese whites

6 cups chicken stock

Salt and pepper to taste

Preparation

 

Mix liver with 11/2 cup chicken stock. Beat the cheese whites till stiff and put into the liver. Spread on a plate and steam till firm. In the remaining stock add chicken and salt and pepper and boil for half an hour. Cut the liver into pieces and boil for 10 minutes. Serve decorated with chopped parsley.
