Patal Bhaji

Patal Bhaji            

Green Leafy Vegetable

INGREDIENTS

10 cola cassia leaves with stems

1 small bunch ambat bhaji (sour greens)

1 tbsp peanuts

1 tbsp Bengal gram

2 tbsp gram flour

2 tbsp oil

1/2 tsp cumin seeds

1 bay leaf

 

2 green cardamoms

A few curry leaves

1/2 tsp cinnamon-clove powder

1/2 tsp garam masala

2 tsp black masala

Salt to taste

1 tsp sugar

2 tsp lemon juice

3 green chillies

5 cups water

METHOD

1. Chop both greens coarsely with stems. Wash, drain and place in a pressure cooker in one container with half a cup of water. In the other container place gram and peanuts with half a cup of water.

2. Cook for four whistles. Cool, remove and blend the greens with a hand mixer. Add gram flour to half a cup of water, blend to a smooth paste and set aside.

3. Heat oil, add cumin seeds, bay leaf, cardamoms, curry leaves and cinnamon-clove powder. Stir for a few minutes.

4. Add boiled peanuts and gram with the water. Bring to a boil. Add blended greens, masalas, chillies, salt, sugar and lemon. Add the remaining water and stir well.

5. Bring to boil and add gram flour paste, stirring continuously. Simmer for five to seven minutes. Serve hot with rice or bhakri.
