THAI STYLE VEGETABLE SOUP

THAI STYLE VEGETABLE SOUP

2 teacups mixed boiled vegetables (french beans, cauliflower, baby corn, mushrooms)

1 coconut

1/2 teaspoon aniseeds

2 teaspoons chopped lemon grass

2 teaspoon lemon juice

2 teaspoons corn flour (level) salt to taste

One meal soup.

Preparation time : 20 minutes.

Cooking time: 15 minutes.

Serves 4.

 

Grate the coconut and add the aniseeds and lemon grass.

Add 4 cups of water, put in a mixer and stir for 1/2 minute.

Strain and squeeze out the coconut milk.

To the coconut milk, add the vegetables, cornflour and salt.

(If you like, add a dash of chilli powder.)

Cook for a few minutes. Add the lemon juice.

Serve hot.
