TOMATO RASAM SOUP FOR DIABETICS

TOMATO RASAM SOUP FOR DIABETICS

Ingredients (Serves 4)

1 large tomato

A handful of arhar dal

4 cups of water

1/2 tsp grated ginger

Salt to taste

1 slit green chilli (optional)

1 tbsp fresh coriander, finely

chopped

4 curry leaves

For tempering

1 tsp refined oil

1 pinch mustard seeds

1 pinch cumin seed

A small pinch of asafoetida

Preparation

 

Chop the tomato and pressure cook with the dal, water, ginger and salt for 15 minutes. Blend and strain. Heat the oil in a karahi. Temper with the mustard seeds, cumin and asafoetida. Add the rasam. When it comes to a boil, add the green chilli, if using, fresh coriander and curry leaves. Serve hot.
